Deconstructed tiramisu

Hello Blog,

For my first recipe I wanted to take a  widely loved classic dessert, and convert it something completely new. Of course, Tiramisu seemed like the perfect choice. This fan-favorite has so many elements to play with. There’s the kick espresso that gives tiramisu it’s classic taste that balances the rich mascarpone, the delicate light lady fingers, and of course the splash of chocolate. With all of these flavorful components I decided to integrate the aspect of the texture. Rather than the classic smooth tiramisu, I used multiple textures to enhance the dish. I created an espresso jelly that was squishy and fun to bite into paired with a light lavender mascarpone cream. I added a crunch into the dish by creating a chocolate bark that was dark and rich. My last two elements consisted of a air light sponge cake with a lady finger and vanilla ice cream for a cool touch. All these pieces both together created a wonderfully fun dessert that let you explore flavors and  combinations. Whilst this dish was quite the challenge due to time and its many parts, it was worth the outcome.
